Chistorra from Arbizu

Embutidos Arbizu is a company with a strong family character that has been operating since the middle part of the 1960s. It has large installations equipped with all the machinery necessary to increase its production capacity, but always from an artisan’s point of view where conception and elaboration are concerned. Arbizu S.A. currently produces such high-quality products as: Chistorras, Chorizos, Bacon and Patés (“Campaña”, Mushroom and Armagnac). The chistorra is hand-crafted. It is a semi-cured sausage that is always produced from pork, either the jowls or the belly. The meat is ground in a meat grinder, and paprika, salt, garlic and a little water are added during the kneading process. Once the filling has been mixed, it is taken from the mixer and placed inside the filler, where the lamb or collagen chistorra casings are stuffed. After tying them in strings, they are hung on sticks, and taken to the drying room. They are dried for four or five days, with the temperature and moisture controlled at all times. Once dry, the chistorra is vacuum packaged and is ready to be marketed.
